Brown Rice Salad, our favourite summer recipe to accompany a campervan barbecue

I thought this was a good time of the year to share a great make-ahead recipe and the perfect complement to a barbecue. I usually make it with good old Uncle Ben’s brown rice but ran out last week and had to buy some absurdly expensive “Wild Camargue Rice” from a deli which took 35 minuets to cook. I was muttering under my breath as I paid for it and cursing about the 35 minute cooking time as I boiled it but I now realise it is worth the extra cost and time. Camargue rice is quite simply the best I have ever tasted, it’s nutty with a wheatgerm texture and bags of flavour. I plan never to make my favourite summer salad with common or garden rice again.

Needless to say, this can be easily achieved in a motorhome kitchen as with all the recipes we share with you in this blog.

Brown Rice Salad

Serves 6

Dressing

– 3 fl oz sunflower oil
– 2 tblspns Soy Sauce
– 2 tblspns Lemon Juice
– Salt and Pepper

Salad

– 6 oz Brown Rice
– 6 Spring Onions (3 French spring onions as they are typically huge)
– 1 Red Pepper, seeded and diced small
– 2oz Currants (Optional)
– 3oz Roasted Salted Cashews
– 3 tblspns Chopped Parsley

Method

Cook rice as directed on pack.

Rinse with boiling water and drain well.

Chop spring onion finely.

Transfer rice to a bowl while still warm and add spring onions then all remaining ingredients including dressing.

Toss thoroughly and serve or cool completely and chill if serving later.

I think this dish improves if you leave it all day or even overnight so it won’t mind if you make it ahead. Do keep it in the fridge once cooled though as cooked rice can be dangerous if left at room temperature for any length of time.

Serve with a green salad and absolutely anything you can cook on the barbecue for a perfect alfresco feast.
