Puffed Rice and Muesli Bars, survival food for hikers, doable in any campervan kitchen

We are pretty committed cyclists to the casual observer and we never travel without our bikes but honestly, at this time of the year, we don’t get a great deal of cycling done.

We love cycling and it is our most frequently practiced form of exercise but we must admit to being somewhat fair-weather cyclists and the French winter can throw some pretty undesirable conditions at us. We are not keen on cycling when it’s really cold (i.e. when your ears might snap off if you go too fast), raining, snowing or too windy so our default, secondary form of exercise is hill walking which we do in pretty much all weathers.

We are surrounded by hills and trees here at the edge of the Foret d’Othe and can walk for hours without seeing another human being. We have been lost a few times in the huge forest and in days gone by we would have taken Kendal Mint Cake (traditional British, emergency mountain food) with us on our hikes but my modern take on emergency nutrition is this recipe for “Puffed Rice and Muesli Bars”. They keep for weeks and make for a tasty treat if you have been out walking a little longer than you intended. If you don’t finish up using them as emergency rations on your hike, they go really nicely with a cuppa back in your motorhome too.

Puffed Rice and Muesli Bar Survival Food

Makes 12 to 16 depending on the size/shape you cut them into

– 150g Puffed Rice Cereal (e.g. Rice Krispies)
– 150g Muesli
– 75g Marshmallows
– 75g Toffee*
– 75g Butter or Margarine
– A little extra chopped, dried fruit (optional, a small handful of raisins, dates or apricots are nice)

Method

Line any shallow, rectangular or square container with cooking parchment (“Papier Cuisson” if you are looking for it in France).

Place butter, toffee and marshmallows in a large pan and heat gently.

Stir until everything is melted and well mixed then remove from heat.

Add puffed rice, muesli and dried fruit (if using) and stir until cereal is totally coated (do this quickly or it sets on you and becomes impossible to combine).

As soon as it is well mixed, tip into the baking tray and smooth out to the edges.
Leave to set then slice into bars or cubes.

*The ideal toffee is chewy but neither rock hard/brittle or really soft. If it tries to hook out your fillings when you eat it, it’s perfect.
